Sambal Goreng Telor

Sambal Goreng Telor is proof that you don't have to spend hours in the kitchen if you want to cook Indian. You also don't need an arsenal of exotic herbs. You probably already have most of the ingredients at home! These spicy eggs are a delicious side dish, but also make a great snack on a birthday or during a drink!

Chop the onion and finely chop the garlic.
Cut the tomatoes into small cubes.
Boil the eggs until they are hard (about 10 minutes) and in the meantime go to Step 1.
Step 1: Prepare the tomato-sambal mixture
Pour a dash of sunflower oil into a soup pan and fry the garlic, onion and sambal for 3 minutes. Use a little more or less sambal to taste.
Then add the tomato and 100 ml of water.
Stir everything well and season with some salt and (brown) sugar.
Step 2: Prepare the eggs
Once the eggs are ready, chill them, peel them, and cut them in half lengthwise.
Carefully place the eggs in your tomato mixture and spoon some of the tomato-sambal mixture over them.
Reduce the heat to low, cover the pan and let it simmer for at least 15 minutes. The longer you let it simmer, the more the flavors are absorbed into the eggs.
Step 3: Serve the sambal goreng telor
Serve your Sambal Goreng Telor with nasi goreng (click here for the recipe) or white pandan rice and a fresh cucumber.
