Indian food can be quite spicy. That is why Raita is often eaten with it, a yoghurt dip that can be prepared in different ways. We received the recipe below from Gaby.
Preparation
Step 1: Grind the herbs
Heat a pan and roast the cumin, coriander seeds and black pepper until it is slightly dark.
Put this stuff in a mortar and pound it.
Step 2: Prepare the raita
Finely chop the green pepper, tomato and cucumber into small cubes.
Chop the red onion and finely chop the fresh mint.
Mix the yogurt with some salt to taste.
Add all the chopped products except the tomato and mix in the herbs. Set aside.
Step 3: Serve the raita
Add the tomato just before serving.
Sprinkle the raita with a little chili powder and serve.
