When I (Dafne) lived in Spain for a few months, Pan con tomate became my favorite breakfast. It's so simple, but oh so delicious! Because this dish only has a few ingredients, the quality of each ingredient is crucial. For this recipe you want the ripest and sweetest tomatoes you can find. These can be large beef tomatoes, but also small, sweet cherry tomatoes. And always use good quality extra virgin olive oil. This is how you make this recipe as tasty as possible!


Eat it for breakfast or lunch and imagine yourself on a sunny terrace in beautiful Spain. Enjoy this simple but delicious Spanish classic!

Preparation

Step 1. Grill the baguette

  • Cut the baguette lengthwise and divide each half into 4 pieces.

  • Drizzle the rolls with â…” of the olive oil.

  • Heat a grill pan and place the rolls cut side down in the pan. Grill until nice stripes appear.

  • Optional: Peel a clove of garlic and rub it on the grilled side of the bread for extra flavor

  • Place the grilled pieces on a platter with the grilled side up.


Step 2. Prepare the tomato sauce

  • Halve the tomatoes and grate them cut side down with a coarse grater until only the skin remains. You don't use the peel.

  • Mix the remaining olive oil into the grated tomato mixture and add salt and pepper to taste


Step 3. Serve the pan con tomate

  • Spoon the tomato sauce onto the grilled sandwiches or serve the sauce separately


Delicious for breakfast, lunch or tapas dish! Can be served with hand-cut ham if desired.

For 4 persons

  • 1 baguette

  • 3 tbsp traditional olive oil (good quality)

  • 2 beef tomatoes (as ripe and sweet as possible)

  • Optional: Garlic
