Indian and Indonesian cuisine are often confused. What exactly is the difference? Indonesian cuisine consists of authentic dishes from Indonesia, with each island having its own specialties. When the Dutch came into contact with Indonesian cuisine during colonial times, the flavors were adapted to European culture, which gave rise to Indian cuisine. Indian food is therefore a mixture of Indonesian dishes and European ingredients. We made one of the most famous Indian dishes: Nasi goreng. Serena tells us that there is no perfect recipe for nasi goreng, because every family puts their own spin on it. Nasi goreng literally means 'fried rice' and is made in no time. Officially, you should serve the nasi goreng without side dishes, but feel free to serve it with pearl onions, sajoer beans or prawn crackers. As long as you don't eat microwaved peanut sauce with it.

Preparation

Step 1 - Optional: Roast the chicken

Skip this step if you want to make vegetarian nasi goreng.

  • Fry your chicken fillets in the pan with some butter, so that it becomes nice and golden brown and crispy.

  • When the chicken is done, pull it apart with two forks until you are left with small pieces.


Step 2 - Prepare the sambal mixture

  • In the meantime, add a generous dash of sunflower oil to a large pan or wok. The pan should be completely covered with a thin layer of oil.

  • Chop the onion/shallots and finely chop the garlic.

  • Then fry the onion/shallots in the oil. As soon as they become a little translucent, add the garlic.

  • Stir well and then add the sambal oelek. Be careful, because this splashes a bit.

  • Add the ketoembar and the trassi and fry everything for 2 minutes. In the meantime, continue to stir the mixture well.


The trassi can smell quite strong. Don't worry, this smell will disappear as soon as you bake it.


Step 3 - Prepare the nasi goreng

  • Then add the raw eggs and mix everything well.

  • Slowly mix the rice with your egg mixture until everything is evenly distributed.

  • Then add the chicken pieces and heat the rice by stirring it well for about 2-3 minutes.

  • Add a dash of soy sauce and possibly some salt to taste. Stir everything one last time.


Step 4 - Serve the nasi goreng

  • Serve the nasi goreng with a fried egg, pickles, atjar, prawn crackers and possibly some sambal. Sprinkle with fried onions and/or some spring onions.

Ingredients

For 4 persons:


  • 250 grams of pandan rice

  • 6 eggs

  • 1 large onion or 4 shallots

  • 3 large cloves of garlic

  • 1 tbsp sambal oelek (more or less is also possible)

  • 1 tsp l ketoembar (coriander powder)

  • Optional: 2 chicken fillets

  • 1 block of trassi (10 ct size)

  • Dash of ketjap

  • Salty
