This recipe is ideal if you feel like having a slightly more special lunch, but don't want to spend hours in the kitchen. Daniela gave us a recipe that is a bit like your old trusted grilled sandwinch, but just a little bit different. Because the sandwich with bean spread and grilled cheese is topped with 'Pico de gallo', you really feel like you're in Mexico. Pico de gallo is a mixture of finely chopped red onion, tomatoes, lime and jalapeno peppers. We naturally added a large pile of fresh coriander, but if you don't like this, you can leave it out.
Preparation

Preheat the oven to 180 degrees
If necessary, bake the roll as indicated on the packaging
Step 1: Prepare pico de gallo (mixture of chopped tomatoes and onion)
Chop the red onion, tomatoes, coriander and jalapeno pepper into small pieces
Squeeze the lime over the mixture and mix together
Step 2: Make the molletes
Cut the rolls in half and spread with a layer of bean spread.
Add some cheese.
Place the rolls in the oven for about 10 minutes or until the cheese is melted and slightly crispy.
Add the pico de gallo and serve.
