This recipe is ideal if you feel like having a slightly more special lunch, but don't want to spend hours in the kitchen. Daniela gave us a recipe that is a bit like your old trusted grilled sandwinch, but just a little bit different. Because the sandwich with bean spread and grilled cheese is topped with 'Pico de gallo', you really feel like you're in Mexico. Pico de gallo is a mixture of finely chopped red onion, tomatoes, lime and jalapeno peppers. We naturally added a large pile of fresh coriander, but if you don't like this, you can leave it out.

Preparation

Preparation:

  • Preheat the oven to 180 degrees

  • If necessary, bake the roll as indicated on the packaging


Step 1: Prepare pico de gallo (mixture of chopped tomatoes and onion)

  • Chop the red onion, tomatoes, coriander and jalapeno pepper into small pieces

  • Squeeze the lime over the mixture and mix together


Step 2: Make the molletes

  • Cut the rolls in half and spread with a layer of bean spread.

  • Add some cheese.

  • Place the rolls in the oven for about 10 minutes or until the cheese is melted and slightly crispy.

  • Add the pico de gallo and serve.

  • 3 Pistols

  • Bean spread (La Morena)

  • Grated cheese

  • 1 red onion

  • 2 tomatoes

  • 1 lime

  • Jalapeno pepper

  • Coriander
