Koloki… how? Although the name suggests otherwise, this Greek recipe is easy to make. You can make delicious burgers from zucchini, feta and dill, among other things. But where does that name come from? 'Kolokithia' is simply Greek for zucchini and 'keftedes' means meatballs. The Kolokithokeftedes are very tasty with tzatziki and can be eaten as a starter or a drink snack. Definitely not to be missed on a snack board with various Greek mezedakia, such as dips with pita bread

Preparation

Preparation:

  • Finely chop the onion and dill. Cut the spring onion into rings. And crumble the feta


Step 1: make the zucchini mixture

  • Grate the zucchini and wring out all the moisture in a tea towel.

  • Place the finely chopped onion in a pan with olive oil and caramelize

  • Mix the zucchini zest, onion, spring onion, feta, egg and dill in a bowl. Be careful with the salt, because the feta is already salty in itself.

  • Add flour until the mixture sticks together so you can roll it into balls.


Step 2: fry the zucchini burgers

  • Pour a generous dash of sunflower oil and some olive oil into a frying pan. Don't be too frugal!

  • Take some of the zucchini mixture with a tablespoon and roll into an oval burger of about 3 cm thick.

  • As soon as the oil is hot, place a maximum of 4 balls in the pan and fry them until golden brown on both sides. .

  • Remove the burgers from the pan and let them drain on kitchen paper.

  • Serve with delicious tzatziki

  • 2 medium zucchini

  • 1 white onion

  • 4 spring onions

  • 200 grams of feta

  • 2 handfuls of fresh dill

  • Flower

  • 1 egg

  • Salty

  • Olive oil for frying

  • Sunflower oil for frying
