This filled cookie, gata, has many variations. This recipe, from Emma's family, is with a filling of (vanilla) sugar and flour. Emma says that in Armenia there is a tradition that the gata is given to the single girls present at the groom's home during weddings. This way they can also experience the sweetness of marriage, getting married itself. The recipe is enough for two cookies.
Preparation
Step 1. Knead the dough
Place the soft butter and flour in a bowl and knead together.
Then add the yogurt, crème fraiche, baking soda, an egg and a bag of vanilla sugar and knead into a nice, smooth dough.
Then let it rest for 10 minutes.
In the meantime, go to step 1.
Step 2. Make the filling
Mix the oil, sugar, flour and vanilla sugar together.
Then fry this in a frying pan over low heat for two minutes until it is golden brown.
Divide the filling into two portions, because we are going to make two cakes.
In the meantime, preheat the oven to 200 degrees.
Step 3. Make the cookie
Divide the dough into two balls and flatten the dough with your fingers. Make sure the sides are slightly thicker than the center.
Place half the filling on the flattened dough and spread it evenly.
Bring the edges of the dough together in the middle and press it closed.
Turn the ball over and flatten it. The cake should be about 1 - 1.5 cm thick.
You can decorate the cookie with a knife and fork. Be careful not to insert your knife or fork too deeply.
Beat the egg and brush the top of the dough.
Then repeat the steps for the second cookie.
Bake the cookies in the oven for 25 minutes at 200 degrees until golden brown.

250 grams of butter at room temperature
300 grams of flour
125 ml yoghurt
75 ml crème fraîche
1 tsp baking soda
1 egg
1 packet of vanilla-flavored sugar
Filling
6 tbsp sunflower oil
100 grams of sugar
35 grams of flour
2 bags of vanilla sugar
1 egg
