When you think of the ingredient potato, you probably don't immediately think of the cuisine of a South American country. What many people do not know is that the potato has its origins in Peru, where the potato is widely eaten. One of Mariëla's favorite potato dishes is Causa Limeña. This dish is typically Peruvian and consists of mashed potatoes, seasoned with lime juice and aji amarillo paste. The causa is built up by alternating layers of mashed potatoes and tuna. This makes it easy to put an impressive starter on the table.
With the causa limeña, the 'Aji Amarillo', made from yellow Peruvian chili pepper, gives a special flavor to the potatoes. You can buy this essential ingredient at the store (we bought it at Tjin's store in Amsterdam) or on Mariëla's website .
Vegetarian? Mariëla gave us an alternative: replace the tuna with carrot, green beans or another vegetable of your choice.

Preparation
Step 1. Prepare the potato mixture
Peel the potatoes and then boil them in plenty of water with some salt for 20 minutes until the potatoes are soft.
Place the potatoes in a large bowl and mash them until you have a smooth mixture without any chunks.
Squeeze the limes until you have 6 tbsp of lime juice.
Add the lime juice, olive oil, aji amarillo paste (add little by little and taste as you go, as it can be spicy) and some salt to the mashed potatoes. Mix well and set the bowl aside.
Step 2. Prepare the tuna salad
Chop a red onion and drain the tuna.
Cut the tomatoes into quarters, remove the seeds and the harder pieces and then cut the tomato into small cubes.
Mix the red onion, tuna, tomato and mayonnaise together. Season with salt and pepper.
Step 3. Serve the Causa Limeña Tuna
Cut the avocado into thin slices.
Place the cooking ring in the center of a plate. First apply a smooth and even layer of mashed potatoes followed by avocado slices
Then add a layer of tuna salad and finally another layer of mashed potatoes. Then carefully pull the cooking ring upwards.
Optional: decorate with extra tomato strips, slices of boiled egg or extra avocado.

6-8 floury potatoes
2-3 tbsp aji amarillo paste
3 limes (6 tbsp juice)
320 grams of canned tuna
1 small red onion finely chopped
2-3 tbsp mayonnaise
2 avocados
2 small tomatoes
4 tbsp extra virgin olive oil
