Preparation
Preparation
Cut the bread into cubes of 2x2 cm.
Scrape 2 teaspoons of vanilla from the vanilla pod.
Lightly beat the eggs.
Grease the cake tin.
Preheat the oven to 180 degrees.
Step 1: Prepare the bread mixture
Mix the bread with sugar, cinnamon, salt and nutmeg.
Add the milk, lightly beaten eggs, 1 tsp vanilla, rosewater and white rum to the bread mixture.
Mix well and then add 1 tbsp butter.
Step 2: Place the layers in the cake tin
Cover the greased cake pan with half of the bread mixture.
Add a layer of slivered almonds and raisins.
Top up with the other half of the bread mixture.
Step 3: Make the apple wine sauce
Cut the apple into thin slices.
Briefly fry the apple slices in a saucepan/sauce pan.
Add the rest of the ingredients for the apple wine sauce to a pan. Bring to the boil and let it simmer for 1 minute.
Remove the apple slices from the sauce and set them aside.
Step 4: Cover and put in the oven
Cover the top of the bread pudding with the baked apple slices.
Bake the bread pudding for 10 minutes at 180 degrees.
Remove the bread pudding from the oven and cover with the apple wine sauce.
Place back in the oven and bake for another 20 minutes or until the bread pudding is lightly browned.
Step 5: Serve!
The bread pudding is best when served warm.
Carefully remove the cake from the cake tin and cut the cake into thick slices.
If necessary, drizzle some (unwhipped) whipped cream on the cake slices.
