Bread Pudding

Joan says that Jamaican cuisine has the ability to stimulate all the senses. She gave us the authentic recipe for Jamaican Bread Pudding, a very popular dessert in Jamaica. There are many different ways to prepare this. This version comes with a surprising apple wine sauce.

Preparation

Preparation

  • Cut the bread into cubes of 2x2 cm.

  • Scrape 2 teaspoons of vanilla from the vanilla pod.

  • Lightly beat the eggs.

  • Grease the cake tin.

  • Preheat the oven to 180 degrees.


Step 1: Prepare the bread mixture

  • Mix the bread with sugar, cinnamon, salt and nutmeg.

  • Add the milk, lightly beaten eggs, 1 tsp vanilla, rosewater and white rum to the bread mixture.

  • Mix well and then add 1 tbsp butter.


Step 2: Place the layers in the cake tin

  • Cover the greased cake pan with half of the bread mixture.

  • Add a layer of slivered almonds and raisins.

  • Top up with the other half of the bread mixture.


Step 3: Make the apple wine sauce

  • Cut the apple into thin slices.

  • Briefly fry the apple slices in a saucepan/sauce pan.

  • Add the rest of the ingredients for the apple wine sauce to a pan. Bring to the boil and let it simmer for 1 minute.

  • Remove the apple slices from the sauce and set them aside.


Step 4: Cover and put in the oven

  • Cover the top of the bread pudding with the baked apple slices.

  • Bake the bread pudding for 10 minutes at 180 degrees.

  • Remove the bread pudding from the oven and cover with the apple wine sauce.

  • Place back in the oven and bake for another 20 minutes or until the bread pudding is lightly browned.


Step 5: Serve!

  • The bread pudding is best when served warm.

  • Carefully remove the cake from the cake tin and cut the cake into thick slices.

  • If necessary, drizzle some (unwhipped) whipped cream on the cake slices.



Ingredients

Bread Pudding:

  • 0.5 white casino bread (about 10 slices of bread)

  • 500 ml milk

  • 2 eggs

  • 1 vanilla pod

  • 75 grams of granulated sugar

  • Pinch of salt

  • 1 tbsp butter

  • 1 tsp cinnamon

  • 0.5 tsp nutmeg

  • 1 teaspoon rose water

  • 40 grams of slivered almonds

  • 40 grams of raisins

  • 30 ml white rum

  • 3 apples

  • Optional: fresh whipped cream (unbeaten)


Apple wine sauce

  • 65 grams of granulated sugar

  • 2 tbsp butter

  • 80 ml red wine

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 2 apples

  • 1/2 tbsp cornstarch
